Winter is coming! The Night King has his army, he has his dragon, and now he has his favourite drink - The Blue Eyed Zombie!

I must confess. I haven’t watched a single episode of Game of Thrones till date. But I know that the show is a HUGE deal in the world out there. Mainly because the internet can not stop talking about it, and every Monday for about an hour my husband transforms into a zombie himself as he peers into the glowing screen lost in a fantasy world of his own.

And it seems like the show is at its fever pitch with the Season finale of season 7 releasing in a few hours!

I decided to chime in on the festivities and treat my husband to a Game of Thrones style Sunday with the Night King’s favorite drink and we call it – The Blue Eyed Zombie.

The Night King! Shown to be a thinking and formidable being. Though the White Walkers are shown as a mindless horde of zombies out to destroy everything, nothing could be further from the truth. Their side of the story will soon be revealed. The Night King has his army of the undead, he has his dragon Viserion, and now, he has his favorite drink (thanks to me!) – the “Blue Eyed Zombie”. Ice cold and mystical – just like the Night King!

The Blue Eyed Zombie

Ingredients

For Lemon Syrup

  • 1/2 cup Sugar
  • 1 1/4 cup Water
  • 1/4 cup Lemon juice
  • 1/4 cup Basil seeds (sabja) or Chia Seeds soaked in hot water for 10 minutes.

For Blue Mocktail

  • 4 tbsp Blue curacao syrup
  • 1 cup water
  • 1/4 cup Basil seeds (sabja) or Chia Seeds soaked in hot water for 10 minutes.

Instructions

  1. Bring 1/4 cup water and sugar to a boil. Switch off the gas once sugar is melted. 

  2. Add lemon juice and mix through.

  3. Now pour the above lemon syrup, 1 cup water, 2 tbsp soaked basil seeds in a container and freeze for an hour.

  4. Pour blue curacao syrup, 1 cup water and 2 tbsp soaked basil seeds in a container and freeze for an hour.

  5. After an hour, take both the containers out and mix the mixture with the help of a fork. Put the containers back in the freezer to freeze. This is to prevent formation of ice crystals and for a smooth melt in the mouth sorbet

  6. After an hour, take the containers out once again and repeat the step above.

  7. Alternatively, you can also quickly blend both the frozen drinks, separately, to form a smooth sorbet.

  8. Spoon, the blue sorbet in a glass of your choice lined with lemon slices. Now put a spoonful of white sorbet on top. Again top with a spoon of blue sorbet.

  9. Now pour a spoonful of soaked basil seeds on top. Garnish with mint leaves and serve immediately.
