I love mushrooms and make mushroom sauce in bulk whenever I get mushrooms from the grocery store. This mushroom sauce is so versatile, I use it for quick snacks, pasta dishes, bruschetta, lasagne, chicken steak, paneer steak, toasts and the list goes on.

This sauce only takes 15 minutes to make and is packed full of flavor. You can always add herbs, spices to make it unique every single time you make it. How do you make mushroom sauce without wine?

This recipe of mushroom sauce is made without wine. Although, I love the version of mushroom sauce with wine and thyme. Wine adds the subtle sweet notes in the sauce which I totally love. Having said that, this mushroom sauce without wine is even better and more versatile. You can use it in more number of dishes.

Ingredients

  • 4 tbsp Butter or Olive oil
  • 1/4 cup Onion finely chopped
  • 1 tsp Garlic finely chopped
  • 1 cup Mushrooms finely chopped
  • 2 tbsp Flour or 1.5 tbsp Whole Wheat Flour
  • 2 cups Milk hot
  • Salt to taste
  • 1/2 tsp Black Pepper Powder
  • 2 tbsp Parsley chopped

Instructions

  1. Heat butter (or olive oil) in a pan.

  2. Add onion and saute till it softens. Now add garlic and mix for a few seconds.

  3. Add mushrooms and saute till mushrooms are soft but not very mushy.

  4. Add flour and stir for a minute or until the raw smell disappears.

  5. Slowly add hot milk in the pan, use a balloon whisk to whisk everything together.

  6. Keep whisking till the sauce thickens and starts bubbling. Since the milk is already hot, it will not take much time for the sauce to thicken.

  7. Switch off the gas and season with salt, pepper and fresh parsley.
