Egg in a hole is a breakfast being served in every plate in the morning. At least that’s what the Instagram tells me. I thought of making eggs in a hole a little differently. Egg Muffins in a hole is toast stuffed with a wholesome egg muffins. These egg muffins are easy, healthy, nutrition packed and very quick to make. A welcome change from the plain egg and toast and oh so delicious!

I have made these Egg Muffins with vegetables and Spinach. Did you know that spinach is a super food which also reduces stress levels? Yes, all the more reason one should include spinach in their daily diet. Spinach and other green leafy vegetables contain folate which helps keep calm, thereby reducing stress levels.

These can very well be called Egg Frittata Muffins as well because of the usage of same ingredients one would use while making Frittata except for cheese. So go ahead and add cheese if you want to make Egg Frittata Muffins.

Healthy Breakfast Egg Muffins Recipe

These wholesome, nutrition packed healthy breakfast egg muffins recipe is hands down the easiest egg recipe I have ever made. These Egg muffins with spinach and vegetables is a must try.

Ingredients

  • 6 Multigrain bread slices
  • 4 Eggs
  • Salt to taste
  • Pepper to taste
  • Bunch of Lettuce leaves
  • 1/2 cup Onion chopped
  • 1/2 cup Carrot grated
  • 1/2 cup Mixed peppers cubed
  • 1/2 cup Spinach shredded
  • Salt and Pepper for seasoning

Instructions

  1. Cut holes in the bread slices using a cookie cutter or knife.
  2. Brush the holes and the bread with some melted butter and bake in a pre heated oven at 180 degree C for 5 to 7 minutes.
  3. Beat 4 eggs and add salt, pepper and garlic(if using).
  4. Now in a muffin tray, assemble lettuce as a wrapping around the muffin.
  5. Place the baked bread holes as the bottom layer.
  6. Layer with onions, carrot, peppers, spinach and pour the egg mixture on top.
  7. Season with salt and pepper.
  8. Bake in a pre heated oven at 180 degree C for 8 to 10 minutes or until done.
