If you don’t have a waffle maker, simply make Sabudana tikki and shallow fry them on a griddle until crisp and done. Recipe remains the same more or less. It’s filling and yummilicious (make that a word please)!

Sabudana has many names. Most popular names of Sabudana are Sago, Tapioca pearls, Sabbaki, Saggubiyyam, Javvarisi. Maharashtrian Sabudana Vada recipe is usually made during upvas or vrat or fasting. In Maharashtra it’s a popular evening snack too. Traditional Sabudana Vada are fried but I have made a low calorie version by making them in a waffle maker instead. These turn out crispy and delicious.

Sabudana Vada Chutney Recipe

Ingredients

  • 1/4 cup Hung curd
  • 1 tsp Coriander chopped
  • 1/2 tsp Red chili powder
  • Salt to taste
  • 2 tbsp crushed Peanuts
  • 2 tbsp Desiccated coconut
  • 1 tbsp Red chili flakes

Instructions

  1. Mix dessicated coconut and red chili flakes and place on a plate.
  2. Mix hung curd, crushed peanuts, salt and red chili powder together and make two balls.
  3. Roll the balls in the coconut and red chili flakes mixture. Your chutney balls are ready.

Ingredients

  • 1/2 cup Sabudana (Tapioca pearls) Soaked for 1 hour
  • 3/4 cup Potatoes mashed
  • Salt to taste
  • 1/2 tsp Cumin powder
  • 1/2 tsp Red chili powder
  • 1/2 tsp Green chilies finely chopped
  • 1/4 cup Fresh coriander chopped
  • 1/4 cup Roasted Peanuts crushed
  • 1 tsp Lemon juice
  • 1 tsp Fine sugar
  • 2 tsp Oil

Instructions

  1. Soak the sabudana with equal amount of water in a large flat vessel so that all the pearls are submerged in water (don't add more water otherwise they will become soggy and sticky while cooking). Soaking needs to happen for one hour for this recipe.
  2. Once soaked and the pearls become a bit soft, remove excess water (if any) and put them in a big bowl.
  3. Add mashed potatoes, salt, cumin powder, red chili powder, green chilies, coriander, crushed peanuts, sugar and lemon juice.
  4. Mix everything well.
  5. Heat the waffle maker and spread some oil on the waffle plates on both sides.
  6. Take half the mixture and place them in the cavity. Press with the waffle maker and cook till crisp and golden brown.
  7. Repeat the step and make another waffle. Serve hot with ketchup/chutney.
