A cold night and a comforting bowl of Italian Minestrone Soup, you can’t ask for more. An authentic Italian minestrone soup is made of vegetables, beans, fresh herbs, pasta in a tomato based flavorful broth. It’s a complete meal on its own. So filling and so yummy. A little drizzle of Olive oil and a slight Parmesan shavings.

This of course is a microwave version and doesn’t have beans but gives you the comfort nonetheless. I love that you get pasta and vegetables in every bite. This one is a vegetarian minestrone soup recipe but you can make chicken minestrone soup or seafood minestrone soup recipes as well.

Ingredients

  • 1 tsp Butter
  • 1 tbsp Onion finely chopped
  • 1/2 tsp Garlic finely chopped
  • 1 tbsp Coriander finely chopped
  • 1/2 tsp Red chili flakes
  • 1/4 cup Tomato puree
  • 1 tbsp Peas & carrot steamed
  • 1 tbsp Corn steamed
  • 1 tbsp Broccoli steamed
  • Basil few leaves
  • 1 tbsp Parsley chopped
  • Salt to taste
  • Pepper to taste
  • 3/4 cup Vegetable stock
  • 1/4 cup Macaroni pasta boiled
  • 1/2 tsp Oregano

Instructions

  1. In a mug, place butter, onion, garlic, coriander and red chili flakes. Microwave for 30 seconds.
  2. Mix through and add tomato puree, peas & carrot, corn, broccoli, macaroni pasta, salt to taste, pepper to taste and vegetable stock.
  3. Microwave for 3 minutes or until done. Keep an eye on the mug and don't overfill it because it might spill otherwise.
  4. Garnish with some dried oregano and serve hot.
