Beetroot Cutlet Wrap | Lunch Box Recipe

This yummy, crunchy on the outside, soft from the inside cutlet is to die for! A healthy beetroot cutlet, beetroot tikki or beetroot patties, which is the only way I enjoy eating this iron rich root vegetable. Perfect to pack in the lunch box for kids. Wrap it in a dosa to make a complete meal.

When I was putting this lunch box together, I didn’t realize I used beetroot in the first and second lunch boxes. But hey, my first lunch box has a subtle beetroot flavor and this recipe screams with health from the beet. Healthy but not at all boring! It’s a totally yummy take on a cutlet with the crunch of peanuts which takes snacking to a new high!

I have paired these beetroot cutlet wraps with a PBJ (Peanut Butter Jam Sandwich) cut in the shape of a Giraffe, Pear and pomegranate arils and beetroot cutlets to snack on!

These taste good even at room temperature but best enjoyed when warm. These cutlet wraps are inspired from my childhood memory of eating these cutlets on our train journey from Delhi to Kolkata. Deep Fried beetroot cutlets were served with two butter bread slices! Pure bliss! My version of course is healthier as they are shallow fried but they taste the way they do because I have such a happy memory eating these cutlets as a kid! I want my child to associate happy with all the vegetables and fruits. This is what keeps me going. Happy Cooking!

Ingredients

For Beetroot Cutlet

  • 1 cup Potato boiled and mashed/grated
  • 1 cup Beetroot boiled and mashed/grated
  • 1 Whole Wheat Bread Slice
  • 1/4 cup Peanuts crushed
  • 1 tsp Ginger and Green Chili paste
  • Black Salt to taste
  • 1 tsp Chaat Masala
  • 1/2 tsp Garam Masala
  • 1 tsp Cumin Powder
  • 1/2 tsp Pepper Powder
  • 1/4 cup Coriander chopped (optional)
  • 1/2 cup Sooji or Semolina for coating
  • Oil for shallow frying

For Dosa

  • 1 cup Dosa Batter
  • Water to dilute

Instructions

  1. For the beetroot cutlet, mix everything together except for oil.
  2. Shape the mixture into cylinders or flat tikkis.
  3. Roll these tikkis into sooji to coat the outside. Refrigerate if not shallow frying right away.
  4. Take oil in a pan, and add a few tsp of oil to coat the pan.

  5. Shallow fry these cutlets until crispy golden brown from outside.
  6. Mix together dosa with a bit of water to make it a bit runny.
  7. Splash it on the tawa to keep some gaps in between just like rawa dosa. Rawa Dosa batter can also be used here.
  8. Cook dosa from both sides until crisp.
  9. Wrap a cutlet inside the dosa for the lunch box.
