I have always believed that you eat with your eyes first and this is especially true for kids. Kids are more likely to try when the food looks nice and different. My attempt at making idli donut was to make the regular idli exciting for my daughter. I made it healthier by introducing beetroot in the idli batter and shaping the idlis like donuts.

Idli donuts look so pretty and can even become a star party dish! Let me also discuss what I have paired these Idli donuts with. I have packed these donuts with broccoli and cherry tomatoes stir fry, apple linzers, donut balls and homemade cheddar biscuits.

This is an easy kids lunch box recipe which is healthy and delicious 2For broccoli and cherry tomatoes stir fry, I sautéed steamed broccoli and cherry tomatoes in 1 tsp olive oil and salt for only a couple of minutes.

For apple linzers, I simply spread very little jam over one apple slice and sandwiched it with another slice with a heart cut in the center. I used a small heart-shaped cookie cutter for this.

Healthy Beetroot Idli Donuts Recipe | Kids Lunch Box Recipe

These lovely pink beetroot idli recipe cut in the form of donuts and sprinkled with fresh coconut make for beautiful lunch box recipe. This is an easy kids lunch box recipe which is healthy and delicious!

Ingredients

  • 1 cup Idli Batter homemade or store bought
  • 2 tsp Beetroot puree* or grated
  • 4 tsp Coconut Chutney
  • 4 tsp Coconut grated or dry coconut powder

Instructions

  1. Mix beetroot puree with the idli batter.
  2. Pour the mixture into greased idli plates.
  3. Steam cook the idlis for 5 to 7 minutes or until done.
  4. Allow the idli to cool completely before using the cutter.
  5. Use a small round cutter to cut the idli in the center and take the center out.

  6. Spread coconut chutney or simply ghee on the Idlis and sprinkle grated coconut for a nice donut touch.

  7. Use the donut centers also and pack them with the idli donuts in the lunch box.

Recipe Notes

*For Beetroot Puree - Boil small beetroot pieces in water for a couple of minutes and then grind without the water into a paste. Alternatively, you could simply use grated beetroot as well.
