Succulent sweet corn kernels mixed with hot butter, cheese and some lemon juice is an excellent snack. I usually end up munching on steaming hot sweet corn available in different flavor combinations, on the street and in shopping malls these days. They are healthy and keep you full for longer. They are so easy to make. You can steam them, blanch them, boil them, saute them or simply crush them to make a nice dip or spread. I also love corn tikkis a lot.
There is often a question raised on How to cook corn kernels? That’s mainly because it’s tricky. They can get dry very soon so I find it easier to just steam corn kernels for a couple of minutes. You can saute corn to retain it’s crunch and make them a bit plump and soft. This can take anywhere between 4-5 minutes depending on the quantity of corn. You can also pressure cook a whole corn on cob for 1 quick whistle (if it’s sweet corn) else two whistles.
