Best Breakfast Chia Pudding With Coconut Milk | Chia Pudding Recipe

I want to wake up to this beauty every morning!! Don’t you? This 15 minute pudding is health in a jar! Delicious, pretty, colorful and full of nutrition!

Chia is an edible seed from a desert plant which belongs to the mint family. It has very little or zero flavor of it’s own. When mixed with a liquid it forms a gel like consistency and hence is ideal to be mixed with smoothies, pudding, etc. Chia seeds keep you full for longer and hence considered a super food. It’s also a good source of Omega 3 fatty acids, plant based protein, antioxidants, fiber and vital minerals.

In India, we use more of Sabja seeds which are similar to chia seeds. Sweet Basil seeds or Sabja (sabza) or falooda tukmaria are more regularly used in india. We usually know it as falooda seeds because Falooda with sweet basil seeds in a sweet milk based shake with noodles and kulfi (ice cream) is a very popular sttreetfood in India. Although healthy, Falooda is not very good for us because of the overload of sugar.

One tablespoon (approximately 14 grams) of Chia seeds contain 68 calories but most of it in the form of good fat which is 4 grams, Sodium 2.2 mg, Carbohydrates 6 grams and Protein 2 grams. It’s recommended that on an average an adult should consume 1 tbsp of Chia seeds on a daily basis.

Let’s move onto our very simple and basic recipe for Chia pudding. This is a breakfast pudding with just three ingredients namely chia seeds, coconut milk and honey (or maple syrup or any natural sweetner you like). The ratio of chia seeds to liquid is important so I usually use 1 tbsp of Chia Seeds to 1/3 cup of liquid or 3 tbsp of Chia seeds to 1 cup of liquid.

I serve this breakfast pudding with really pretty and colorful Fruit Kebabs on a skewer, a Homemade Granola Bar and drizzle it with a plum compote (which can be replaced by any fruit syrup of simply honey if you feel like or you can totally skip it)

  • 1/2 cup Mixed fruits diced
  • 2 tbsp Maple Syrup or Honey
  • 2 cup Coconut Milk
  • 6 tbsp Chia Seeds
  • 1 tbsp Plum Compote* (see notes) optional, to serve
  • 1 bar Homemade Granola** (see notes) optional, to serve
  • 2 skewers Fruit Kebabs*** (see notes) optional, to serve


  1. In a jar or bowl, place half of mixed cut fruits.

  2. Now put 3 tbsp of soaked chia seeds (Soak the seeds in water or in coconut milk directly for a couple of hours before hand or overnight in the fridge).

  3. Drizzle 1 tbsp of Maple Syrup or Honey in the jar.
  4. Pour 1 cup of coconut milk.
  5. Place the two fruit kebab skewers in the jar. Pour some plum compote and granola on the side for a complete breakfast.
  6. Repeat the steps to make another jar with the rest of the ingredients.

Recipe Notes

For Plum Compote - Simply heat fresh plums with sugar (1 cup plums would need 1/2 cup of sugar depending on how sour the plums are) till plums break down and become soft. Keep stirring in between and add very little water if they start sticking. Keep it to cool down, before storing
