Coleslaw Sandwich With Cashew Cream

Veg coleslaw sandwich recipe made with cashew cream is the best coleslaw sandwich you will ever taste. It’s a healthier version of the coleslaw sandwich which replaces the widely used mayo with freshly made cashew cream.

Coleslaw is traditionally a Dutch Salad made with shredded cabbage in a vinegar based dressing. It is now widely made with mayonnaise as one of it’s main ingredients. Coleslaw sandwich is also called as Mayo Sandwich for the same reason.

We love this simple coleslaw sandwich. It’s creamy, satisfying, has a lovely crunch from all the vegetables. My daughter loves this sandwich and I love it because it is a great way to add vegetables in her food. She happily eats this sandwich because of it’s creamy, slightly tangy and slightly sweet taste.

The crunch in the coleslaw sandwich is from shredded vegetables like cabbage, carrots, peppers, onion, etc. Creaminess comes from Mayo traditionally but I have made a fresh cashew cream which is equally creamy and of course a healthier alternative to Mayo which is nothing but oil and egg yolk. Addition of cashew cream makes this a completely Vegan Coleslaw Sandwich.

Coleslaw Sandwich

Coleslaw sandwich is made with shredded vegetables and freshly made cashew cream.

Ingredients

  • 6 Bread Slices Multigrain or Whole Wheat
  • 1 cup Cashew soaked in warm water for 30 minutes or regular water for an hour or more
  • 1/4 cup Curd
  • 2 Garlic cloves
  • 1 tsp Mustard Sauce
  • Salt and Pepper to taste
  • 1/4 cup Cabbage shredded
  • 1/4 cup Carrot shredded
  • 1/4 cup Mixed Peppers thinly sliced
  • 1/4 cup Coriander finely chopped
  • 1 tsp Honey

Instructions

  1. In a blender, blend together soaked and drained cashew, curd, garlic, mustard sauce, salt and pepper to taste. Keep it aside.
  2. In a big bowl, take the shredded vegetables cabbage, carrot, mixed peppers, coriander, honey, salt and pepper.
  3. Now add the cashew cream prepared in step 1.
  4. Mix everything together and adjust seasoning if required.
  5. Take the bread slices. To shape the sandwiches you can cut the bread slices into shapes with a cookie cutter.
  6. Place one bread slice, put a spoonful of the coleslaw, close the sandwich with another bread slice.
  7. Serve them cold.
