Corn cheese toast sandwich is pretty easy to make and is made with a delicious corn spread. This corn spread is sweet, spicy and very healthy as it has corn and milk. Cheese binds the sandwich together and imparts a unique flavor combination. I have grilled these sandwiches, you can simply apply the spread on a toast, sprinkle cheese and eat it.
Corn has huge health benefits and is quite filling too. It’s a great source of fiber and complex carbs. Corn contains a good amount of Vitamin C, magnesium, potassium and Vitamins. They also supply a good amount of antioxidants which are beneficial for eyes, skin and hair. It can very well replace the junk food at home to a larger extent. You can simply replace those biscuits with a grilled corn on the cob. Or the piece of sweet with a steamed corn on the cob. I have sweet corn in my freezer always and buy fresh corn on the cob when they are in season. I don’t buy the imported varieties that are available in super market these days. Seasonal vegetables are best bought seasonally and that’s when they give the most benefit.
Cheese also has its benefits but it varies from cheese to cheese. I only follow one rule for cheese which I have understood from my research on this subject. Hard cheeses are good source of protein and have comparatively high salt content. Soft cheese on the other hand has less protein and less carbs too. One of the best cheeses which has the right balance is Parmesan cheese. Cheddar cheese is very good for children. None of the processed cheeses do any good so it’s always best to go for aged cheeses and not processed ones. For the corn cheese toast sandwiches, it’s not necessary that you add cheese. Cheese does enhance it’s taste but can very well be replaced or totally skipped. If you want to replace cheese you can try corn sandwiches with white sauce.

Corn Cheese Toast Recipe or Corn Cheese Grilled Sandwich Recipe is easy, healthy and delicious.
- 1/4 cup Onion finely chopped
- 1/2 tsp Garlic minced
- 2 tsp Butter
- 1 cup Corn boiled and mashed
- 3/4 cup Milk
- Salt to taste
- 1/2 tsp Pepper
- 1/2 tsp Red chili flakes
- 1/2 cup Mozzarella cheese grated
- 4 Whole wheat bread slices
- Butter to spread
Heat butter in a pan and add onion. Once translucent, add garlic and saute for a few seconds.
Add boiled and mashed corn and mix well until the mixture is a bit dry. Now add salt, pepper and milk.
Mix well and continue stirring until it the mixture thickens a bit. If it's very dry, then add more milk or water.
Add red chili flakes and cheese. Mix well and switch off the gas.
Apply the corn and cheese spread on two pieces of whole wheat bread. Cover them with a bread slice each.
Apply butter on both sides (outer) of the sandwich and grill them both on an electric grill or on a flat hot griddle on stove.
Crispy corn and cheese sandwich is ready.
