The other day I made apple pie pancakes. Yes, yes apple pie pancakes and they were delicious. My daughter absolutely loves pancakes and I don’t leave an opportunity to try healthy pancake recipes for her and for the family. This time I made healthy whole wheat eggless banana pancakes.

These banana pancakes were absolutely delicious, moist and fluffy. I decorated these pancakes with a banana caterpillar and the smile on my daughters face was worth a million times more. She absolutely loved these pancakes and I am sure you would too. I am going to continue working on a few other healthier pancake recipes for you all. Whole Wheat Eggless Banana Pancakes | Caterpillar Banana Pancakes

Ingredients

  • 1 1/4 cup Whole wheat flour
  • 1 1/2 tsp Baking powder
  • Pinch Salt
  • 2 tbsp Sugar (preferably ground) or Jaggery
  • 1 tsp Vanilla Essence
  • 2 Ripe Bananas, small (or 1 Big)
  • 2 tsp Ghee or Oil
  • 1 Banana for Garnish

Instructions

  1. Mix together the dry ingredients, flour, salt, sugar. Keep aside.

  2. Mash banana's with the help of a fork till smooth (you can even use a mixer).

  3. Now add milk, vanilla essence, ghee (or oil) in mashed banana and mix well.

    Add dry ingredients to the wet ingredients and mix till a smooth batter forms.

  4. Now, heat a pan, add a tsp of oil and use a cloth to season (wipe) the pan with the oil. Once the pan is hot enough, pour a spoonful of batter. Add little ghee/butter/oil around it.

  5. After a minute, flip the pancake to cook from the other side. Cook it on low flame for the pancake to cook from inside. Once the pancake is cooked and golden brown, take it out.

  6. Wipe the pan once again to remove any excess oil. Use up the batter and make all pancakes.

  7. For garnish, arrange small slices of banana like a caterpillar. Make eyes and mouth with anything you like. I have used choco-chips and a red tooti fruti piece.

    Drizzle with chocolate sauce and serve warm.
