Baked Eggless Doughnut Recipe

Baked eggless doughnut recipe is just what I needed for our doughnut cravings. These fluffy, soft and glazed donuts are to die for. You will not even notice that it’s not fried and baked instead.

I can’t call my recipe completely guilt free because I have used a mix of whole wheat flour (aata) and all purpose flour (maida) but the good news is you can follow the same recipe with whole wheat flour only and get similar results. This is a no fail recipe for baked doughnuts.

These doughnuts are simply out of this world. When you make these at home, you will use more natural ingredients and can keep a check on harmful chemicals like colors. You can always naturally color the glaze and also use good quality ingredients to make these delicious doughnuts.

Donuts or doughnuts are traditionally fried but you can bake them or you can also make no yeast doughnuts. Glazing a doughnut is an important step and I have shown two types of glaze here in this recipe. The simple Vanilla Glaze and Chocolate Glaze. You can make a lot of other versions like fruit glaze or cinnamon sugar coating.

I have also used a good mix of sprinkles to bring in the much needed pop to make them attractive for my 4 year old. These undoubtedly have to be the best thing I have baked so far.

Ingredients

For Doughnuts

  • 1 cup Whole Wheat Flour (aata)
  • 1 cup All purpose flour* maida
  • 1 1/4 cup Milk warm
  • 1/3 cup Oil
  • 1/4 cup Sugar fine or ground
  • 1/2 tsp Instant Yeast

For Glaze

  • 1 cup Icing Sugar
  • 1/2 tsp Vanilla Essence
  • 3 tsp Milk
  • 2 tsp Chocolate Syrup
  • Various Sprinkles

Instructions

For Doughnuts

  1. Take 1 cup warm milk in a bowl. Milk should be warm and not hot.
  2. Now add oil, sugar and yeast.
  3. Mix well and add flour.
  4. Mix again and use 1/4 cup more milk to get the mixture to hold together.
  5. Cover the mixture with a tight lid or kitchen towel and keep aside in a warm place for 30 to 40 minutes.
  6. After 30 to 40 minutes, the dough would have almost doubled in size and will have developed air pockets.
  7. Now bring the dough on a board and lightly knead into a smooth and soft dough.
  8. Now using a rolling pin, roll the dough into a circle which is at least 1/2 inches thick.
  9. Now take a glass and cut circles. Now take a small round cutter and cut small holes in each circle.
  10. Place the holes as well donuts on a greased oven tray. Cover and keep the doughnuts for another rise for 15 minutes.

  11. Bake in a pre heated oven at 180 degree C for 13 to 15 minutes or until brown on the surface.
  12. Keep the doughnuts on a wired rack ready for glazing.

For Glaze

  1. Mix together icing sugar and vanilla essence.
  2. Mix icing sugar using 1 tsp milk at a time. I used 3 tsp milk to make vanilla glaze with 1 cup icing sugar.

For Glazing of Doughnuts

  1. Dip half the doughnuts in the vanilla glaze and coat one side of the donuts.

  2. Now mix chocolate sauce to the rest of the glaze and mix well.
  3. Dip the rest of the doughnuts in chocolate glaze.

  4. Now sprinkle various sprinkles on dooughnuts and decorate as you like.

  5. Serve cold.

Recipe Notes

You can replace maida with whole wheat flour to make a healthier version of this recipe.
