Gobi (Cauliflower) has suddenly become a super food and being consumed more than ever now! Vegan cauliflower recipes are taking internet by the storm. It’s one of the most common vegetables here in India and cooked very often. Since we as a nation consume Cauliflower more than we consume broccoli, we have a plethora of cauliflower recipes. With so many regional variations and pairings, we will never have a dearth of Cauliflower recipes.
Is cauliflower a super food?
Cauliflower belongs to the cruciferous vegetable family and is as nutrient rich as other cruciferous vegetables especially broccoli and kale. It is rich in phytonutrients which help fight cancer. This powerful vegetable is rich in vitamin K, Folate, Vitamin C, manganese and antioxidants. If you ask which is better between cauliflower vs broccoli, then I would say both because they are excellent for health. Although it also causes flatulence so just be wary of the fact and use flatulence reducing spices and food with it.
I have added an interesting twist in this Gobi Masala restaurant style recipe, to make it healthier and more flavorful. Amritsari flavor in curries is to die for. Carom seeds and Clove spiced Gobi is baked to perfection, in this recipe. It was hard to resist the crispy goodness once it came out of the oven. When you add this crispy awesomeness to the restaurant style curry base, you get a damn delicious cauliflower curry! Tips & Tricks
-Steam the vegetables instead of boiling them. This will help retain nutrients.
-Retain the crunch in the vegetables to give your dish a nice texture.
-You can control the spice factor in this preparation. I don’t order veg kadai when we eat out mostly because it’s spicier than other veg curries.

Amritsari Gobi Masala Restaurant Style
Gobi Masala recipe restaurant style is a unique baked gobi in an Amritsari style curry preparation.
- 2 cups Cauliflower florets
- 3-4 Cloves
- 4-5 Garlic cloves
- 1 tbsp Carom seeds
- 4 tbsp Oil
- 1/2 cup Onion chopped
- 1 tsp Green chili and ginger paste
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam Masala powder
- 1 cup Gravy Base
- Salt to taste
- 1 tsp Lemon juice
- 1/4 cup Coriander leaves chopped
Mix together cauliflower, salt, 2 tbsp oil, cloves, garlic and carom seeds.
Bake in a pre-heated oven @ 180 degree C for about 13-15 minutes or until golden brown and done. You can even pan fry them till golden.
In a pan, heat 2 tbsp oil. Add onion and saute for a minute.
Add green chili and ginger paste and saute for a few seconds.
Add turmeric powder, garam masala, gravy base and salt to taste. Mix well
Now add baked cauliflower, garnish with coriander leaves, put lemon juice.
Garnish with coriander leaves, green chilies and serve hot with chapatis or roti.
