Lemon Coriander Soup Recipe in a Mug
Lemon Coriander Soup recipe made in a mug in 10 minutes. Microwave lemon coriander soup is an Indo Chinese broth which is fragrant, comforting and has healing properties.
- 1 tsp Butter
- 1/2 tsp Garlic finely chopped
- 2 tbsp Coriander finely chopped
- 3/4 cup Vegetable stock
- 1 tsp Lemon juice
- 1 tbsp Broccoli steamed
- Salt to taste
- Pepper to taste
- Fresh coriander few leaves
In a mug, place butter, garlic and coriander. Microwave for 30 seconds.
Mix thoroughly and add vegetable stock, lemon juice, broccoli, salt and pepper.
Microwave for 2 minutes or until mixed through. Keep an eye on the mug and don't overfill it because it might spill otherwise.
Garnish with fresh coriander and serve hot.
