Lemon Rice served with Crispy Chicken Pop and vegetable Tree make our first in the series of Kids Meals. Crispy chicken and lemon rice combination is fun and a balanced meal.
My 3 year old daughter is not a fussy eater but she wipes these fun meal plates clean. This motivated me to make a series of kids meals which they will not only enjoy but also show a lot more inclination towards. Kids between 2 years to 5 years, are particularly fussy and picky about what they eat. This leaves us moms often frustrated and helpless. I have been there so I know how hard it is to deal with a fussy eater.
What I have learnt from various parenting articles and online sources is that their priorities are different. They are more interested in free play and exploring the world out there. They also have abundant energy in them which they constantly need to let out. This makes them least interested in food. So, it’s up to us to give them nutritionally dense food when they are eating.
With this idea in mind, I have made a series of kids meals which are fun, creative, healthy and yummy. Here’s my first meal which includes Crispy Chicken Pops, Lemon Rice, Healthy Vegetable Tree, a bowl of curd, fruit custard and chocolate milkshake. This is a well balanced meal with protein, carbs, vegetables, calcium and fruits. Lemon Rice | Kids Meal #1
Lemon rice is a fragrant rice dish made with lemon and turmeric powder. It's an excellent accompaniment with gravy dishes ans well as chicken curries.
- 1 cup Rice cooked
- 1/2 tsp Urad Dal
- 1 tbsp Ghee or Oil
- 1/2 tsp Mustard Seeds (optional)
- Few Curry Leaves
- 1/4 cup Onions finely chopped
- 1 tbsp Peanuts
- 1/2 tsp Turmeric powder
- 1 tsp Lemon Juice
- Salt to taste
- 1 tbsp Coriander finely chopped
Mix together cooked rice, salt, lemon juice and sugar (if using) with the help of a fork. Set aside.
Heat Ghee in a pan, add mustard seeds, urad dal and curry leaves. Mix well till urad dal turns light brown.
Add onion and peanuts. Fry for a minute or until soft.
Add turmeric powder and mix well.
Now add the mixed rice, coriander and mix well.
Switch off the gas once mixed through. Serve warm.
