Homemade Potato Gnocchi Pasta Recipe
Classic potato gnocchi recipe which is tender, soft and pillowy pasta.
- 1/2 cup Boiled and Mashed Potato
- 1/4 cup Whole Wheat Flour
- Salt to taste
- 1/2 tsp Pepper Powder optional
- 1 tbsp Ghee clarified butter
- 1 tsp Garlic chopped
Make sure that the potato mash is cold and not steaming hot. The potatoes need to be mashed very well. Preferably, through a potato ricer or you can pass it through a sieve to get a smooth mash.
Take boiled and mashed potato in a bowl or on a clean work surface.
Add flour, salt and pepper to the potatoes.
Start mixing and knead into a soft but non sticky dough. If the dough is sticky, then you may need to add flour, little at a time. If it’s dry then, you will need to add more potato mash to it.
Roll the dough into a log approximately 1/2 inch in diameter.
Cut the whole log into 1 inch pieces.
Now with the help of some flour, form each piece in the shape of a small pillow.
You can roll each pillow down the back of a fork to give them their distinctive shape but this step is totally optional.
Now heat a pot with water and salt and bring it to a boil.
Drop the gnocchi in the boiling water and wait for it to come up. Take the gnocchi out with a slotted spoon as they come up and immediately pour some cold water over them.
Heat a pan and pour ghee (or clarified butter).
Add garlic and stir until fragrant.
Add drained gnocchi and slightly crisp them up in ghee. Don’t mix too much otherwise the gnocchi may break.
You can add any vegetable or sauce of your choice. This is a simple crispy gnocchi recipe.
