I love to innovate and Uttapam being one of the most popular breakfast recipes in India, I tried making the vegetable uttapam recipe a little differently. I made Uttapam Podi Tacos! I used the prepared Dosa batter at home. You can make uttapam batter recipe with rice flour or you can even make instant rava uttapam. Instant suji uttapam or instant rava uttapam batter gets ready in minutes and is really helpful when there is no Ildi Dosa batter readily available.

This recipe for vegetable uttapam recipe taco is super quick, healthy and delicious too!

Made mini uttapam and used them as taco shells to bunch together a raw salad of mixed vegetables. Sprinkled it with the ever amazing and tasty podi masala. Did I tell you that I am in love with “podi”? First thing Bangalore introduced me to, was this almost potent flavor bomb spice mix called “podi”. I absolutely love it and use it over everything and sometimes anything to bring in the missing zing!

Ingredients

  • 1 cup Rava (Suji or Semolina)
  • 1/2 cup Curd
  • Salt to taste
  • 1/2 tsp Black pepper powder
  • 1 Fresh coriander small bunch chopped
  • Water as required
  • 1/2 cup Carrots sliced
  • 1/2 cup Capsicum sliced
  • 1/2 cup Tomatoes sliced
  • Fresh coriander small bunch
  • Podi masala to sprinkle

Instructions

  1. Mix together rawa or semolina, curd, salt, black pepper, chopped coriander.
  2. Add water to bring the batter to a medium consistency.
  3. Set aside while you switch on the gas and heat a pan.
  4. Once the pan is hot, make small and thin uttapam (pancakes) two to three at a time depending on how big the pan is.
  5. Use very little oil to drizzle and cover and cook for a minute. Flip and cook until cooked through and slightly brown.
  6. To assemble, add vegetable slices, coriander between each uttapam and sprinkle with podi. Pick up and eat as tacos!
