A spicy red sauce is the quint essential Pasta sauce which suits the Indian palate and is my personal favorite too. There are so many variations you can do with just this sauce. Choose a different vegetable, or a different cheese, or a different pasta. This vegetable pasta in red sauce is probably the most popular recipe for pasta with everyone having their own variations. Pasta in red and white sauce is also called pasta in pink sauce. Pink sauce is simply made by adding cream / white sauce to the red sauce pasta.

How do you make tomato sauce for pasta at home?

Let’s learn to make the most basic classic Italian red sauce for Pasta. It’s made with canned tomatoes but in India it’s usually made with fresh tomatoes or cherry tomatoes. I also make a lot of variations to the very same recipe by sometimes charring the tomatoes before making the sauce, or by adding red bell peppers for the extra smokiness and sweetness, or by adding some healthy carrots in the sauce. Cherry tomatoes bring a new dimension to this sauce. If you have cherry tomatoes, simply shallow fry them with olive oil/butter and garlic with seasoning and a few fresh basil leaves. You will have a sauce in minutes.

Ingredients

  • 2 tbsp Olive oil
  • 1/2 cup Onion chopped
  • 2 Garlic crushed
  • 1/2 tsp Red chili flakes
  • 1/4 tsp Celery chopped (optional)
  • 1 tsp Parsley chopped
  • 1/2 cup Bell Peppers diced
  • 1/4 cup Corn steamed
  • 1 cup Homemade Tomato Puree*
  • Salt to taste
  • 1 tsp Pepper
  • 1/2 tsp Oregano
  • 1 cup Pasta Farfalle cooked
  • Parsley for Garnish
  • Cheese for Garnish
  • Red chili flakes for Garnish

Instructions

  1. In a deep pan, heat olive oil. Add onions and saute for a couple of minutes.

  2. Add garlic and saute for a few seconds. 

  3. Add red chili flakes, celery, parsley, bell peppers and give it a nice mix. We don't want the bell peppers to cook and loose the crunch.
  4. Now add corn and tomato puree. Add salt, pepper and oregano. Mix well.

  5. Add pasta and mix well. Adjust the seasoning if required.
  6. Garnish with parsley, cheese and red chili flakes and serve hot.

Recipe Notes

For *Homemade tomato puree (1 cup), add 2 chopped tomatoes to a pan with 1 tbsp of olive oil and fry until soft. Grind it into a smooth puree once cold.
