The gravy base will take 30 minutes. I often make chicken tikka as a starter one night and make the chicken tikka masala the next day with the “deliberate” left overs. Restaurant Style Chicken Tikka Masala

For Chicken Tikka Masala

  • 2 tbsp Oil
  • 1 Black cardamom crushed
  • 1 tbsp Ginger and green chili paste
  • 1/2 cup Brown onion paste*
  • 1 tbsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chili powder (Kashmiri)
  • 1 tsp Black pepper powder
  • 1 tsp Tandoori Masala
  • 1 cup Gravy Base recipe link in notes
  • Salt to taste
  • 3/4 cup Tandoori Chicken**
  • 1 tsp Lemon juice
  • Onion slices, lemon slices, green chilies and coriander for garnish

For Brown Onion Paste*

  • 2 tbsp Oil
  • 1 Onion medium, sliced

For Tandoori Chicken**

  • 200 gms Chicken, thigh or breast boneless
  • 2 tbsp Roasted gram flour
  • 1/2 cup Thick curd or Hung curd
  • Salt to taste
  • 1/2 tsp Chat Masala
  • 1 tsp Lemon juice
  • 1 tsp Tandoori Masala or Garam masala
  • 2 tsp Ginger and garlic paste
  • 1 tsp Cumin powder
  • 1 tsp Red chili powder
  • 1/2 tsp Black pepper powder
  • 1 tbsp Oil


For Brown Onion Paste*

  1. In a pan heat 2 tbsp oil and add sliced onion (1 Medium). Let it cook on low heat, stirring in between, until it turns golden brown (but not burnt). 

  2. Add a tsp of sugar once it starts turning brown. Take it off the gas and blend it into a paste with the help of water or 2 tbsp curd.

For Tandoori Chicken **

  1. Take all the ingredients in a bowl except for oil.

  2. Heat oil and add hot oil to the mixture above and mix everything together. Cover and marinate for a minimum of 30 minutes or overnight.

  3. Once done, grill chicken pieces in a gas Tandoor or a flat griddle until done.

For Chicken Tikka Masala

  1. In a pan, heat oil. Add crushed black cardamom, ginger and green chili paste and fry for a few seconds.

  2. Add brown onion paste (method below) and saute for a minute. Add all the dry spices and the gravy base.

  3. Fry for a while and then add cooked Tandoori Chicken (method below) to the gravy.

  4. Mix well. Sprinkle lemon juice and mix well. Garnish with onion slices, lemon slices, green chilies and coriander and serve hot.
