I love to eat cashew nuts but people always tell me to eat it in moderation as it could lead to weight gain. I tried to find out if cashews make you gain weight? What I read was an eye opener. Cashews are full of healthy mono-unsaturated and polyunsaturated fat. These are rather good for your heart and cholesterol. The fact does remain that this nut should be eaten in moderation but the fact that it leads to weight gain is not entirely true.
In this recipe, I have coated cashews with Cajun spice mix. You easily get Cajun Seasoning in the market but if you wish to make your own, like me, then the link to the perfect Cajun Seasoning is here. It’s a very versatile spice mix. I use Cajun seasoning in marinades, in sauces, on pizzas, in pastas and in dips. This is the first time I used Cajun seasoning to coat cashews and boy, am I surprised! It just makes the cashews pop! These roasted cashews spiced with Cajun seasoning is perfect for mid meal snacking or as travel food for snacking on the go.
My daughter found it a bit spicy but still enjoyed a few of them. I will reduce the amount of spice I use in my home-made Cajun Spice Mix and make these cashews again. They are definitely a hit.
Cajun spiced Roasted Cashews Recipe
Roasted cashews or cashew nuts, spiced with Cajun seasoning and roasted to a crispy perfection for that perfect snack.
- 1/2 cup Cashews (or 60 gms)
- 1/2 tbsp Butter
- 1/4 tsp Garlic, finely chopped
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 tsp Cajun Seasoning
- 1/4 tsp Brown sugar (optional)
In a saucepan, heat butter and add garlic.
Now add cashews and roast them on low heat for approximately 7 to 8 minutes.
Once roasted, add salt, pepper, sugar, Cajun seasoning and mix well to coat.
Switch off the gas to prevent the spices from burning.
Once cool, store in an air tight container for two weeks.
