Easy Rocky Road
A fudgy rocky road is the easiest treat you can make in a jiffy. Great for parties, evening snack or simply a slice with a hot cuppa. Don’t we all love a slice of this chocolaty treat with fluffy marshmallows, crunchy nuts and biscuit crumble.
My daughter loves this special treat every once in a while and especially this one because I add a little bit more of her favorite marshmallows. It’s a no bake classic rocky road recipe and so easy to make. I call these the ultimate rocky road because it’s fudgier and more chocolaty.
Rocky Road Ingredients
Usually it is made with fluffy marshmallows, crunchy nuts, and crumbled cookies, folded into a mixture of melted chocolate and butter.
What kind of nut is in rocky road?
Originally walnuts were used in rocky road recipe which were later replaced with toasted almonds. But any nuts of your choice can be used like pistachios, cashews, pecans, etc.
How do you make a Rocky Road?
First melt the chocolate with butter (optional) or with condensed milk. Then add marshmallows, nuts, biscuit crumble. Mix it well and set it in a rectangle tray. Cut into small pieces once set.
Is Rocky Road Australian?
Rocky road dates back to 1853 when it was first made in Australia from the spoiled confectionery items that had spoiled during a long travel from Europe. These were mixed with melted chocolate and nuts to disguise the taste. Rocky road was manufactured in large quantities only in America in the 19th Century.

Rocky road made with marshmallows, nuts and biscuits coated in a mixture of chocolate and condensed milk
- 1 1/4 cup Chocolate (200 gms) chopped
- 1/2 can Condensed Milk (200 gms)
- 1 cup Marshmallows, 1/4 cup for Garnish
- 1/4 cup Walnuts peanuts and almonds or nuts of your choice
- 1/4 cup Cranberries
- 1/4 cup Gems or M&M’s for Garnish
- 1/4 cup Biscuit crumble for Garnish
- 1/4 cup Pistachios crushed for Garnish
Mix together chopped chocolate and condensed milk in a glass bowl.
Now microwave in 30 second intervals to melt the chocolate. To prevent the chocolate from seizing, stir in between to see if the chocolate has melted. Take it out, once the chocolate has melted.
You can alternatively use a double boiler system to melt the chocolate. For this, you have to keep the glass bowl on a pot of boiling water on the gas. Continuously stir while the boiling water is melting the chocolate. Care has to be taken to prevent steam from coming into the bowl.
Once the chocolate melts, add 3/4 cup Marshmallows, walnuts and cranberries in the chocolate and mix well.
Pour the batter into a square or a rectangle lined tray. I have lined it with butter paper. You can even grease the tray instead.
Now sprinkle marshmallows on 1/4th of the square or rectangle, gems or M&M’s on 1/4th ,biscuit crumble on 1/4th and crushed pista on 1/4th.
Level the rocky road set for about half an hour in the fridge.
Cut into pieces and store in an air tight container.
