Who doesn’t like a good Mac and Cheese. For many its comfort food. I usually make Baked Mac and Cheese but this time I decided to use my stove top to cook up a creamy macaroni and cheese. I have taken the classic Mac & Cheese and have given it a twist by adding saffron. Technically this makes it into a “Yellow” pasta sauce. It’s so flavorful and unique that you would want to make it just the very moment you see it or read about it! Which is now, by the way, just kidding! You can add any protein you wish in the pasta dish.
Mac and Cheese is all about cheese for me but this version you will see a sauce made with home-made cream cheese and flavorful saffron. This yellow sauce pasta is to die for. It’s cheesy, delicious, aromatic and subtly royal! It’s just perfect. Once you try this recipe, you may never go back to the classic mac & cheese.
Stovetop Mac and Cheese Recipe
A creamy, flavorful and different Mac and Cheese recipe with a touch of Saffron. This creamy macaroni and cheese is cooked on a stovetop and ready in minutes.
- 1 tbsp Olive oil
- 1/2 cup Onion chopped
- 2 Garlic crushed
- 1/4 cup Red bell peppers chopped
- 1/4 cup Corn steamed
- 1/2 tsp Red chili flakes
- 1/2 cup Chicken boneless broiled (optional)
- Salt to taste
- 1 tsp Pepper
- 1/2 tsp Oregano
- 1 cup Homemade cream cheese
- 1/2 cup Cheese
- 1/2 cup Milk
- 1 cup Pasta Macaroni cooked
- Few Saffron strands soaked in warm milk
- Cheese for Garnish
- Red chili flakes for Garnish
In a deep pan, heat olive oil. Add garlic and saute for a few seconds.
Add onions and saute for a couple of minutes. Add bell peppers, corn and mix well. Add red chili flakes.
At this point, you can add broiled chicken pieces if you want or else leave it for keeping it vegetarian.
Add salt, pepper and oregano. Now add cream cheese, cheese and milk all at the same time.
Saute well on low heat till the sauce comes to a boil.
Add pasta and mix well. Adjust the seasoning if required.
Add soaked saffron and mix again.
Garnish with cheese, red chili flakes and serve hot.
For *Homemade cream cheese (1 cup), first grind 1 cup diced cottage cheese (paneer) until crumbly. Now add 1/2 cup hung curd and grind till smooth.
