My most loved recipe post till now has been a video recipe for Sandwich 4 Ways. Since we all love sandwiches so much, I have a new and one of our absolute favorite veg sandwich recipes for you. Spinach Corn Sandwich, is our go to as an after school snack or for those mid meal hunger pangs. We make this quite often and love to devour it with a nice fruit smoothie. Spinach and corn are a match made in heaven. I love this combo in my curries, pasta and they also make for some yummy fritters.

This sandwich looks and tastes exotic and is made with the healthiest and simplest of ingredients, corn and spinach. I was introduced to this sandwich because of my love for coffee. These spinach corn sandwiches were sitting pretty in the display shelf at Cafe Coffee Day outlet and I was immediately drawn to them. I enjoyed the flavor combination so much that it became one of our favorite sandwiches to make at home as well. Spinach Corn Sandwich is creamy, cheesy and a delight in every bite. This grilled sandwich recipe is healthy and easy to make with just a few ingredients and a lot of Yum.

  • 1 1/2 tbsp Oil or Butter
  • 1 tsp Garlic finely chopped
  • 1/4 cup Onion finely chopped
  • 3/4 cup Corn Kernels frozen* or fresh
  • 1 1/2 cups Spinach roughly chopped
  • Salt to taste
  • 1/2 tsp Black pepper powder
  • 1 tbsp Whole Wheat Flour
  • 3/4 cup Hot Milk
  • 1/4 cup Cheese grated
  • 1/2 tsp Oregano or Italian Seasoning optional
  • 1/2 tsp Red Chili Flakes optional
  • 6 slices Whole Wheat Bread
  • 3 tbsp Butter to Spread
  • 3 Cheese Slices optional


  1. Heat oil or butter in a pan or a kadhai.
  2. Once the oil is hot, add garlic and onion. Saute until translucent or for a couple of minutes.
  3. Add corn, spinach and cook for a few minutes or until the corn is soft and spinach has wilted.
  4. Make a well in the center and add a tbsp of oil.
  5. Add flour and mix till it's slightly brown or the raw smell disappears.
  6. Add hot milk and mix everything together till a boil comes.
  7. Add salt, pepper and cheese. Mix well. Add Italian seasoning, red chili flakes if using.
  8. Cook till the most of the moisture evaporates and you have a thick bread spread.
  9. Spread butter on both sides of all bread slices.
  10. Spread a couple of spoonfuls of the corn and spinach spread on three slices.
  11. Arrange a cheese slice on top if using. I have not used cheese slices as the mixture was already cheesy.
  12. Cover with the other bread slice and grill these sandwiches until brown and crispy from outside. You can also toast them on a flat griddle or tawa till they are golden brown from both sides.
  13. Cut the sandwiches in the middle.

  14. Serve warm or pack in an aluminium foil once they are at room temperature, for lunch box.

Recipe Notes

*If you are using frozen corn, then soak them in warm water for 5 minutes.
