A green sauce is the most aromatic and flavorful of all. Subtle hint of basil, creaminess from the nuts in the pesto and the saltiness of the spinach, make for a healthy and a flavor packed pasta dish. I have paired this sauce with Spaghetti. I also love this sauce with zucchini noodles or zoodles (have you tried them yet?).

Zoodles with Pesto is the new food innovation and is certainly here to stay. I love the fresh raw flavors and it’s a salad but a complete meal in itself.

How do you make Pesto?

A lot of people still feel intimidated by the recipe for Pesto. A lot of people still buy a store bought Pesto which is not even half as good as the home made Pesto you can make. You just need a few ingredients for the perfect classic Pesto recipe. For a classic Pesto, you need fresh basil leaves, garlic, olive oil, pine nuts and Parmesan cheese. There are lot’s of variations to this classic Pesto. You can replace pine nuts with almonds, cashews, etc. You can use other hard cheeses if you don’t have Parmesan cheese (remember not to use soft cheese like ricotta, if you want to store the pesto and also because it may not add to the taste or creaminess of Pesto. This pesto can simply be added to Pasta to make a pesto pasta recipe.

Ingredients

  • 1 tbsp Butter
  • 1/2 cup Onion chopped
  • 2 Garlic crushed
  • 1/2 cup Bell Peppers sliced
  • 2 tbsp Homemade Pesto*
  • 1/2 cup Spinach puree
  • Salt to taste
  • 1 tsp Pepper
  • 1/2 tsp Oregano
  • 1/2 tsp Red chili flakes
  • 1 cup Pasta Spaghetti cooked
  • 1/4 cup Cheese
  • 1/2 cup Milk
  • Parsley for Garnish for Garnish
  • Cheese for Garnish
  • Red chili flakes for Garnish for Garnish

Instructions

  1. In a deep pan, heat olive oil. Add garlic and saute for a few seconds.

  2. Add onions and saute for a couple of minutes.
  3. Add bell peppers and give it a nice mix. We don't want the bell peppers to cook and loose the crunch.
  4. Now add basil pesto and spinach puree. Mix well.
  5. Add salt, pepper, red chili flakes and oregano.
  6. Add pasta and mix well. Adjust the seasoning if required.
  7. Now add cheese and milk and give it a nice mix.
  8. Garnish with parsley, cheese and red chili flakes and serve hot.

Recipe Notes

For *Homemade Pesto (1/2 cup), grind together Basil (1 cup), pine nuts (1/4 cup), salt, pepper, pinch of nutmeg, olive oil (2 tbsp) and vinegar (1/2 tsp).
