I don’t always feel like going through the long process of making elaborate meals, making various gravies, prepping vegetables, kneading dough, making chapatis. At such times, meals like these come to a rescue. Hassle free, quick and comfort cooking. It’s simple because all I have to do is layer vegetables, white sauce, season and push it in the oven to finish the dish! What can be simpler than this.
This recipe for vegetable au gratin is not only simple, but very healthy too. Goodness of vegetables and very less cab over all because I end up skipping the garlic bread and have two servings of this comfort meal. This recipe screams comfort and winter. Imagine holding a bowl of this steamy hot creamy vegetables while curling up on the sofa with your favorite blanket and binge watching your favorite show! That’s life!

Quick, healthy and versatile baked vegetable au gratin recipe is best served hot with a side of garlic bread or crisp bread
- 2 cups Mixed Vegetables steamed
- 1 cup Mix Peppers diced
- 1 tsp Oregano or Italian Spice Mix
- Salt to taste
- Pepper to taste
- 1 cup Cheese grated
- 2 cups White Sauce* Recipe Link in Notes
Add steamed mixed vegetables and peppers in an oven proof dish.
Now sprinkle salt, pepper, oregano (or Italian spice mix).
Sprinkle half the grated cheese on top.
Pour white sauce over and distribute well.
Sprinkle the rest of the cheese.
Cover with an aluminium foil and bake in a pre-heated oven at 180 degree C for about 10-15 minute or until bubbling.
Remove the aluminium foil and broil the baked dish for another 5 minutes (place it on the top most level) until the cheese is golden brown.
Serve hot with garlic bread or any crispy bread.
