Veggie Nacho Dip is a Quick and Easy appetizer for party served with nachos or tortilla chips.
Mix together tomatoes, chilies (if using) and onion. Add cumin powder and paprika.
Pour vinegar in a pan and bring it to boil over high heat. Add brown sugar and salt and cook for about a minute or until sugar dissolves. Remove and keep aside.
In another pan, heat olive oil, put garlic and saute for a few seconds. Add red chili flakes and mix on low heat for a few seconds until fragrant. Now pour the vinegar mix and switch off the gas.
Pour this liquid over the tomatoes mixture and let it cool. Blend coarsely, add parsley and spring onion greens. Serve cold.
You can make this salsa ahead of time also. It gets better with age.
Mix together everything, chill and serve.
Crush boiled beans with the help of a fork. Add onion, corn, salt, coriander, lemon juice, garlic, red chili flakes and cumin powder. Mix together and serve cold.
Add a layer of rajma and corn salsa first. Then add pickled salsa. Sprinkle some green onions.
Now add a layer of grated cheese. Now pour over the sour cream and layer it.
Now add chopped vegetables and a little bit more salsa if you like. Now sprinkle grated cheese and parsley. Sprinkle with red chili flakes. Serve with baked nachos.
Serve with homemade or store bought tortilla chips.
