The best and my go to Eggless Pancake recipe. Basic eggless whole wheat pancakes made in a paniyaram pan with delicious apple pie stuffing.

Ingredients
  • 1 1/4 cups Whole wheat flour
  • 1 1/2 tsp Baking Powder
  • Pinch Salt
  • 2 1/2 tbsp Sugar or Jaggery
  • 1 tsp Vanilla Essence
  • 2 cups Milk
  • 2 tsp Ghee or Oil
  • 1 Apple, small, cut into small pieces
  • 3 tbsp Brown Sugar (or Palm Sugar or Jaggery or Sugar)
  • 1/2 tsp Cinnamon powder
Instructions
  1. Mix together the dry ingredients, flour, salt, sugar. Keep aside.

  2. Mix milk, vanilla essence and ghee (or oil).

  3. Add dry ingredients to the wet ingredients and mix to form a smooth batter.

  4. Mix together apple, brown sugar and cinnamon. Microwave for a minute and set aside. Alternatively, cover and cook for a couple of minutes in a pan on the gas stove. Apples need to become little soft and coated with sugar and cinnamon.

  5. Heat a paniyaram pan and add a drop of oil in each cavity. Pour 1 tsp of batter in all the cavities. Cover and cook for half a minute.

  6. Now add 1/2 tsp of the apple mixture (without the juices) on each pancake. Cover all pancakes with 1/2 tsp of the pancake mixture. Cover and cook till one side is cooked. 

  7. Flip the pancakes and cook from the other side till done. Drizzle with the leftover juicy apple pie mixture before serving.
