Lemon rice is a fragrant rice dish made with lemon and turmeric powder. It's an excellent accompaniment with gravy dishes ans well as chicken curries.

Ingredients
  • 1 cup Rice cooked
  • 1/2 tsp Urad Dal
  • 1 tbsp Ghee or Oil
  • 1/2 tsp Mustard Seeds (optional)
  • Few Curry Leaves
  • 1/4 cup Onions finely chopped
  • 1 tbsp Peanuts
  • 1/2 tsp Turmeric powder
  • 1 tsp Lemon Juice
  • Salt to taste
  • 1 tbsp Coriander finely chopped
Instructions
  1. Mix together cooked rice, salt, lemon juice and sugar (if using) with the help of a fork. Set aside.
  2. Heat Ghee in a pan, add mustard seeds, urad dal and curry leaves. Mix well till urad dal turns light brown.
  3. Add onion and peanuts. Fry for a minute or until soft.
  4. Add turmeric powder and mix well.
  5. Now add the mixed rice, coriander and mix well.
  6. Switch off the gas once mixed through. Serve warm.

  7. For this meal, Lemon Rice is served with Chicken Pops, Bowl of Curd, Vegetable Trees. For dessert you could offer fruit custard and chocolate milk or plain milk in the morning.
