Ingredients
  • 2 tbsp Butter
  • 1 tbsp Olive Oil or Regular Oil
  • 1 tsp tsp chopped
  • 1 tsp Celery chopped (optional)
  • 1/2 cup Onion chopped
  • 1/2 cup Potato diced
  • Salt to taste
  • 1.5 cups Spinach (200 gms) steamed
  • 1/2 tsp Pepper
  • 2 cups Stock or Water or Chickpea Water (if available)
  • 1 cup Paneer (cottage cheese) diced (optional)
  • 1 tsp Red chili powder
Instructions
  1. Melt butter in a pan. Add 1 tbsp of oil to prevent the butter from burning.
  2. Add garlic, celery and onion. Fry till translucent.
  3. Add potatoes, salt and mix well.
  4. Cover and cook on low till potatoes are cooked.
  5. Add steamed spinach or fresh spinach, pepper. Mix well and roast till properly wilted.
  6. Blend into a smooth soup with the help of vegetable stock (or water or chickpea water).
  7. Shallow fry cottage cheese in a pan with 1 tsp butter until golden brown. This is a garnish and you can skip this step if you want.

  8. Pour the soup and garnish with cottage cheese cubes, sprinkle some red chili powder and serve hot.
