Ingredients
For Spice Mix*
  • 1/2 tsp Cinnamon powder
  • 1/2 tsp Cardamom powder
  • 1/4 tsp Clove powder optional
  • 1/2 tsp Ginger powder optional
For Christmas Fruit Cake
  • 1 1/2 cups Whole Wheat Flour
  • 3/4 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1.25 cups Brown Sugar
  • 1 tsp Vanilla Essence
  • 100 gms Butter
  • 1 Orange pureed (with pulp, without seeds)
  • 1 cup Fresh Orange Juice
  • 1/2 cup Curd
  • 1/4 cup Milk Hot
  • 1 3/4 cups Dry Fruits*
Instructions
  1. Make the spice mix by mixing cinnamon powder, cardamom powder, clove powder (if using) and ginger powder (if using). Keep aside.
  2. For soaking the dry fruits*, chop the dry fruits into small pieces. I have used a mix of almonds, cashews, walnuts, plums, apricots, cranberries, dates, black raisins, ginger candy. I have used 65% dry fruits and 35% nuts.

  3. Soak all the dry fruits with 1 cup orange juice, half of spice mix and 1/2 tsp orange zest. If the orange juice is very sour, add 1-2 tbsp of sugar. Keep the bowl away for soaking for at least 30 minutes or overnight.
  4. Sift the dry ingredients together in a bowl, flour, baking powder, baking soda and half of spice mix. Keep aside.
  5. In a bowl, whisk together butter and sugar till soft and fluffy. Now add curd, hot milk, vanilla essence and orange zest. Whisk again till nicely mixed.
  6. Now add the dry ingredients in two parts and mix through.
  7. Add thick orange juice from one orange at this stage and whisk again.
  8. Sieve the soaked dry fruits to remove the juice. Sprinkle 2 tbsp of flour over the soaked dry fruits so they don't sink at the bottom while baking.
  9. Mix these dry fruits with the cake batter using cut and fold method. Once mixed properly, transfer to a greased cake tin (I used a 7 inch cake tin) and bake in a pre heated oven at 180 degree C for about 40 to 50 minutes.
  10. If you feel that the cake is getting darker at the top and has still not baked, then cover the top with an aluminium foil to prevent the skin from burning.
