Course: Drinks
Cuisine: Indian
Servings: 1 cup
Author: Nandita
  • 1/2 cup Almonds unsalted
  • 1/2 cup Cashews unsalted
  • 1/2 cup Pistachios unsalted
  • Few Saffron Strands
  • 1/4 cup Makhana (Fox Nut), split in half and checked for worms
  • 1 tsp Ghee (Clarified Butter)
  1. Dry roast all the nuts together on low heat in a pan till lightly roasted. Make sure they don’t get burnt.
  2. Once roasted, add saffron to the pan and roast for a few seconds and take everything out on a plate to cool.
  3. In the same pan, add 1 tsp ghee (clarified butter) and add makhana (fox nut). Roast till they are crispy. Take them out to cool.
  4. Once everything is at room temperature, place in the mixer jar. Avoid over filling the jar. Only till it’s half full.
  5. Now, pulse at regular intervals, multiple times, till you get a sufficiently fine powder. Don’t grind and don’t let the mixer jar get hot. If it’s hot, then wait till it comes to room temperature again.
  6. Sieve the dry fruit powder to get a fine mixture. And then you can pulse the residual nuts once again until everything is used up.
  7. Store in an air tight jar upto 1 month. I prefer storing dry fruit powder in the refrigerator to prevent them from going rancid and soggy.
  8. To prepare milk with dry fruit powder, mix 2 tablespoon of this mixture in hot milk with the sweetener of your choice.
