Ingredients
For Watermelon Compote
  • 2 cups Watermelon cut into small chunks, seeds removed
  • 1/4 cup Sugar or any sweetener of your choice
For Watermelon Ice Cream
  • 1 cup Watermelon Compote
  • 1/2 cup Whipping Cream or 1 cup non-whipping cream
  • 1/4 cup Condensed Milk or adjust as per your taste
Instructions
For Watermelon Compote
  1. Put watermelon chunks in a pan or deep pot and let it simmer in it’s own juices.
  2. Once the watermelon pieces are soft, approximately 8 to 10 minutes, add sugar.
  3. Mix well and stir until sugar dissolves completely. Remove from heat and let the watermelon compote cool.
For Watermelon Ice Cream
  1. If using whipping cream, whip it till soft peaks form or it’s very well aerated. We don’t need proper peaks only well aeration of the cream.
  2. If you don’t have whipping cream, use regular non whipping cream as is in a bowl.
  3. Add condensed milk and cooled down watermelon compote.
  4. Mix lightly. Cover the bowl, with a cling wrap or aluminum foil so that the ice cream doesn’t come in contact with freezer air directly.
  5. Freeze for 6 to 8 hours or overnight. Remove the cling wrap, scoop out the creamy ice cream and serve immediately.
