Zucchini corn fritters are made with grated zucchini and corn. This recipe is eggless.

  • 1/2 cup Zucchini grated
  • 1/2 cup Corn
  • 1/4 cup Spring onion chopped
  • 2 tbsp Besan or gram flour
  • 1/2 tsp Garlic chopped
  • 2 tbsp Coriander chopped
  • 1/2 cup Curd thick
  • 1/2 tsp Ajwain or carom seeds
  • Salt and Pepper to taste
  • Chaat Masala optional
  • Oil for shallow frying
  1. Drain excess water from the grated zucchini.
  2. Put grated and drained zucchini in a bowl and mix all other ingredients except for oil.
  3. Mix well. The mixture should be like pancake consistency. Not very thick but not very runny as well.
  4. Using a scooper or a ladle, take small portions of the mixture and put them on a hot griddle or a frying pan.
  5. Drizzle some oil on top and shallow fry from both sides until browned or done.
