Creamy Broccoli Pasta

  • 2 tbsp Olive Oil or regular oil
  • 1/2 cup Mixed Bell Peppers coarsely chopped
  • 1/4 cup Sweet Corn steamed
  • 1 tsp Garlic finely chopped
  • 1 cup Broccoli florets steamed
  • 1 tbsp Olive oil
  • 1 tbsp Whole Wheat Flour
  • 1 cup Milk boiled
  • Salt to taste
  • 1/2 tsp Black Pepper
  • 1/2 tsp Oregano
  • 1 cup Penne Pasta
  1. Boil 3 cups of water in a big pot for cooking pasta.
  2. Add 1 tbsp salt to the boiling water and once water comes to a roaring boil, add dried pasta.

  3. Cook as per package instructions or until pasta is just soft and not mushy. Should take anywhere from 8 minutes to 12 minutes.
  4. Drain the pasta and reserve the pasta water.
  5. Steam broccoli florets and chop them finely or grind them in a mixer grinder to get a nice and smooth texture.
  6. Add olive oil in a deep skillet.
  7. Once the oil is hot, add mixed peppers and saute for a minute.
  8. Then add corn and saute for a minute. Add chopped garlic and mix well.
  9. Now add finely chopped or ground broccoli and mix well.
  10. Now with the help of a ladel or spoon, make some space in the center.
  11. Add 1 tbsp oil In the center and add flour. Cook the flour, till the raw smell from the flour disappears. Now add hot milk and mix everything well.
  12. Once the sauce starts to thicken, add Salt, Pepper and Oregano. Mix well.
  13. Add the boiled pasta now and mix well. Adjust the consistency by using leftover boiled pasta water.
