  • 1 cup Urad Dal (black gram) soaked for 4-5 hours
  • 1/4 cup Onion chopped
  • 1/4 cup Carrot chopped
  • 1/4 cup Coriander chopped
  • 1 tsp Garlic and Ginger paste
  • 1 tsp Curry leaves shredded
  • 2 tbsp Raisins
  • 2 tbsp Cashews broken into small pieces
  • 1 tsp Cumin powder
  • Pinch Asafoetida (hing)
  • Salt to taste
  • 1 tsp Black Pepper Powder
  • Oil to shallow fry
  1. Urad dal should be soaked for 4 to 5 hours prior to making this recipe.
  2. Grind soaked and drained Urad Dal into a smooth paste with as little water as possible.
  3. Now add onion, carrot, coriander, ginger, garlic, curry leaves, raisins, cashews, cumin powder, asafoetida, salt and pepper in the urad dal mixture.
  4. Combine everything together until mixed properly.
  5. Now at this stage, you can fry vadas with this mixture. However, in this recipe I will make shallow fried vada in paniyaram pan.
  6. Heat a paniyaram pan and add very little oil in all the holes.
  7. Now add a spoonful of the batter in every paniyaram hole.
  8. Cover and let the vadas cook. Flip all the vadas to cook from the other side.
  9. Use a little bit more oil if required for the other side to cook.
  10. Once sufficiently cooked or browned, take them out.
  11. Serve these vadas with green chutney or coconut chutney.
