I have been meaning to make these zucchini fries or chips for forever now. I just got to it one fine day and thought will also show you how I do! Hope the video with this recipe helps you get the desired texture and result.

We were more than happy with how baked zucchini chips turned out. They were crispy on the outside, soft inside and packed with flavor from parmesan and rosemary.

Yes, I have used rosemary in this recipe to flavor the chips. You can use any herb, fresh or dried, to achieve the flavor combination you like. Thyme and Basil will go beautifully with Zucchini. And if you try another herb, do let me know how you liked it in the comments below.

Are Zucchini Chips healthy?

Zucchini chips are very healthy. Especially this recipe which is baked and uses Parmesan cheese. These crispy chips can easily replace the unhealthy french fries and potato chips. Zucchini is very low in net carbs. Net carbs are the digestible carbs which can contribute towards blood sugar levels. A medium Zucchini may have about 4.4 gms of net carb.

Can we make zucchini chips in the microwave?

Yes, zucchini chips can be made in the microwave. You just have to make sure that you arrange zucchini in a single layer and coat lightly with oil for it to brown. Microwave on high and keep checking in between. It should ideally take anywhere between 4 and 5 minutes.

Ingredients

  • 1 Medium Zucchini sliced thinly
  • 2 Bread Slices Whole Wheat or Multigrain
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp Garlic Powder optional
  • 2 tbsp Parmesan Cheese grated
  • 2 Sprigs of Rosemary or Basil or Thyme
  • 2 tsp Oil

Instructions

  1. In a food processor or mixer, add freshly torn bread slices, salt, pepper, garlic powder, Parmesan cheese, rosemary and pulse until it the mixture resembles bread crumbs.
  2. Coat Zucchini slices with oil and add breadcrumb mixture.
  3. Mix thoroughly to coat all the pieces or individually coat all zucchini slices.
  4. Place all zucchini slices in an oven tray in a single layer without overlapping.
  5. Bake in a preheated oven at 190 degree C for about 8 to 10 minutes or until light golden brown. You can turn the zucchini chips once while baking for a good crunch on both sides.

  6. Best enjoyed warm.
