Eggless Zucchini Corn Fritters

Zucchini corn fritters are delicious, healthy, eggless snacks which can be put together easily with very few ingredients. These amazing zucchini fritters are the best way to sneak in zucchini and corn in kids food.

These healthy zucchini fritters are pan fried with very little oil. These make for an excellent after school snack, evening snack or a snack to go. Kids will love these little crispy yet soft zucchini corn fritters dipped in some ketchup or a home made dip. It is also one of our most loved tea time snack.

I often make fritters but corn fritters with zucchini is an excellent combination. Zucchini is soft and neutral in taste and hence makes for an excellent base for fritters. Corn adds the much needed crunch and sweetness. This recipe for zucchini corn cakes is made without eggs and to make it completely vegan, you can replace curd with water.

My daughter loves any and every fritters I give her. At a young age, kids prefer snacks more than a full meal plate. Snacks are also the easiest to put together and are also very easy to tweak the way we want. We can add a lot of healthy ingredients as per our choice and tweak the recipe as we like it. Zucchini Corn Fritters

Zucchini corn fritters are made with grated zucchini and corn. This recipe is eggless.

Ingredients

  • 1/2 cup Zucchini grated
  • 1/2 cup Corn
  • 1/4 cup Spring onion chopped
  • 2 tbsp Besan or gram flour
  • 1/2 tsp Garlic chopped
  • 2 tbsp Coriander chopped
  • 1/2 cup Curd thick
  • 1/2 tsp Ajwain or carom seeds
  • Salt and Pepper to taste
  • Chaat Masala optional
  • Oil for shallow frying

Instructions

  1. Drain excess water from the grated zucchini.
  2. Put grated and drained zucchini in a bowl and mix all other ingredients except for oil.
  3. Mix well. The mixture should be like pancake consistency. Not very thick but not very runny as well.
  4. Using a scooper or a ladle, take small portions of the mixture and put them on a hot griddle or a frying pan.
  5. Drizzle some oil on top and shallow fry from both sides until browned or done.
